Carnival of the Recipes #16
The Carnival of the Recipes is here! I had to be careful not to drool on my laptop from all the yummy sounding recipes. I’m going to just jump right in.
Let’s start with a drink. Ith at Absinthe & Cookies brings us her very own drink creation, Pilgrim on the Beach. If you’re a pumpkin lover, this could be the drink for you. It sounds like drinking a pumpkin pie, with a little alcohol for some kick. Go visit and applaud Ith for her originality.
Now that we’ve wet our palette, we’ll have a little snack. Fried Banana and Peanut Butter Sandwich is not only a snack, but can be a quick meal. We can thank Kinayda over at Kin’s Kouch for this tasty morsel.
Lisa from The Tao of Me brings us Chicken Nachos. The recipe is designed for two, but can easily be multiplied for the masses.
Stuffed Mushrooms is a great beginning to any meal. And if you make them like Be from Bebere.com it’s more like a whole meal packed in a little mushroom. It’s a great way to finish off those leftovers.
I almost forgot my own recipe this week. Artichoke Dip is made in many different ways with a lot of different textures. I think if you like a lot of cheese you will like this dip.
How about some salad before our soup course? We have a tempting Caesar Salad given to us by Amanda, An Aussie Wife. It can even be vegetarian if you omit the anchovies.
We’ve had a drink, snacks/appetizers, and salad. And now for some soup. Triticale – the wheat/rye guy brings us a twist from the traditional way of preparing pumpkin. He wants to help us use up the extra pumpkin we have in the pantry with Moroccan Pumpkin Soup. It’s a perfect meal for those cold winter evenings.
Another great soup for winter is chili. We get a family favorite, Holtz’s Chili, shared by Kari at Dogwood Dreams, but created by her husband, David. I love a good chili and will add this to the ever growing “need to try” list.
VW over at One Happy Dog Speaks brings us Slow Cook Pasta Fagioli Soup. This is great for those meals when you don’t have a lot of time. You throw it all in the crockpot and you’re done for the most part. Who doesn’t love that?
How’s this for a mouth-watering name? Roasted Butternut Squash Soup with Coriander and Cumin. This decadent soup is brought to us by Bothenook over at A Geezer’s Corner.
Donna from Pajama Pundits has graciously shared with us her mother-in-law’s gumbo recipe. Elvie’s Shrimp Gumbo doesn’t involve making a roux, which cuts down on the time factor, but does not diminish the taste factor. Sounds like a great combination.
And now for our appetizing main course options. First, we have Cornbread Chicken Pot Pie. It’s brought to us by Caltechgirl from Not Exactly Rocket Science (love that title, by the way). This sounds like comfort food to me and will be on our menu soon.
Jeff over at Trub. The Sediment of Life shares with us Buttermilk Brined Pork Chops. After marinating, these pork chops cook up in no time. I love quick and easy recipes, don’t you?
If you prefer beef, Christina from Feisty Repartee shares a recipe for Classic Beef Tenderloin. She’s even thrown in a horseradish dish for a little extra zing. It’s another dish that needs to marinate, but I am sure it is worth the wait.
There’s always King Ranch Chicken or, if you’re bilingual, El Pollo Rancho del Rey. It’s another classic, but everyone has their own tasty touches so don’t miss this one from El Capitan at Baboon Pirates.
Another poultry dish is given to us by David at A Glittering Eye. He shares with us Turkey Chilaquiles Salsa Verde. He reminds us this is a great way to make our leftover turkey into a completely different fabulous dish.
For those of you who are looking for healthier dishes or just a change of pace, it looks like Vegetarian Enchiladas might be the dish for you. This is Ted of Rocket Jones’ very own creation. Ted is also looking for another name for this dish as this is his third vegetable enchilada achievement.
We could always use a side dish or two. Owlish from the aptly named Owlish Mutterings give us his Modified Wilson’s Cornbread Stuffing. It even has chicken in it, so you will probably want to check it out. It’s the best of both worlds – chicken and stuffing in the same dish.
No meal is complete with some kind of bread. Sarahk of mountaineer musings shares her grama Shirley’s recipe for Hot Rolls. The small part of me that is Italian always comes out when it comes to bread. I can’t wait to try these.
Ah, yes, my favorite part of the meal: dessert. We’ve got Pumpkin Gooey Butter Cake from Gullyborg whose home is at Resistance is Futile! Now, who would not want to try a cake with the word gooey in the name?
It’s also that time of year for cookies, cookies, cookies. Amy of Prochein Amy give us New England Christmas Cookies. She says they’re like windmill cookies, only better. Her mom has to hide them or her hubby will eat them all. They must be good!
Holiday Sugar Cookies are sure to please everyone. Marybeth suggests refrigerating the dough so that it is easier to handle and she has great tips for decorating them. She hails from Random thoughts of Marybeth.
Booklore brings us not one, but two recipes using ginger. First there are Gingersnaps and also Gingerbread Cookies. She wants to remind us also the 6th is Saint Nicholas Day when “good little Polish children will get toys and gingerbread in their shoes that morning.” Thank you for the reminder, Booklore.
It turns out Ith is not our only creative genius of a baker or chef. My many thanks to those who invented their own recipes and those who shared treasured recipes. It has been a blast once again.

Hi folks, I’m looking for Crock Pot recipes for 2-4 people. The books are full of recipes for 8-12. I like beef stew, but I don’t want to eat it all week. I’ve googled and spent a couple of hours searching the internet for this and checked out recipe books with little success. And I’ve contacted the manufacturer Rival with no luck. So, it’s not as if I haven’t tried. Thanks in advance.
